Kerri Walsh taped her shoulder during the Olympic beach volleyball tournament in Beijing. (I have no personal experience with the taping although I wore CWX compression tights last year in several of my early Pacer races because of patella tenderness and it helped stabilize in seemingly the same manner the tape is being used).

I haven't been able to find any youtube videos or descriptions of specific ITB syndrome taping techniques. They are available, but at this point seemingly only if you shell out some money for the "secret."
Final word - taping (and there are a few other methods though not with emergent popularity of K-tape) seems to have a fairly solid following. Certainly, it is being tried with some success by a lot of high-level trainers and athletes. I am not sure it is a magic bullet, but sounds worth trying anyway.
